Teres Major Steaks

The teres major — the same cut you may know as the petit tender — is a small, lean cut from the chuck primal, less expensive than filet mignon and delicious when cooked on the griddle with rosemary and a finish of Amish butter.

Ingredients

- Teres major (petit tender) steaks
- Italian dressing (or just salt and pepper)
- Fresh rosemary
- Amish butter (from Whitt's Place)

Instructions

- Before cooking, either marinate the steaks in Italian dressing or simply salt and pepper them.
- Preheat the Blackstone to medium heat, then put the steaks on.
- After turning, lay rosemary on top of the steaks for a little more flavor.
- After a few more minutes, turn again and add some Amish butter for even more flavor and moisture.
- Slice to serve.
