Perfect New York Strip

A simple, almost foolproof way to cook a New York strip — sear it hot on the griddle, finish in a hot oven, and rest under a tent of foil.

Ingredients

- New York strip steaks
- Salt and pepper
- Butter


Instructions

- Preheat the oven to 500°F.
- Preheat a griddle on high to 600°F. Season the steaks with salt and pepper.
- Sear the steaks on the griddle for 2 minutes on each side. Sear the fat strips for 30 seconds.
- Cook the steaks in a cast-iron skillet in the 500°F oven until the desired temperature.
- Schmear the tops of the steaks with butter, tent with foil, and rest for 5–10 minutes.
