New Year’s “Clean the Fridge” Beef Soup

A perfect, easy first-of-the-year soup that cleans out the bits and pieces in your fridge and freezer — an homage to Whitt and Paddy's lean bachelor days. Use any other lonely veggies you have; the more the merrier.

Ingredients

New Year’s “Clean the Fridge” Beef Soup
  • 1 pound ground sirloin
  • 2 cups chopped carrots
  • 2 cups chopped potatoes (any kind; red ones with the skins on work well)
  • 1 onion, diced
  • 6 cups beef broth
  • 1 (8-ounce) can tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tsp celery salt
  • 2 bay leaves
  • 1 tsp black pepper (or more to taste; freshly cracked)
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 cup frozen cut green beans

Instructions

New Year’s “Clean the Fridge” Beef Soup
  1. Brown the beef. Add the onions and carrots and cook for a few minutes.
  2. Add the Worcestershire sauce, tomato sauce, beef broth, and seasonings.
  3. Immediately add the potatoes and frozen vegetables.
  4. Bring to a boil, then simmer for 30 minutes, until all the veggies are tender.
