Beef Brisket with Onions

So easy with only a few ingredients — brisket slow-cooked over sweet onions and concentrated fruit juice until it slices tender. Serve with mashed potatoes and the vegetables of your choice.

Ingredients


- 1 beef brisket
- Salt and pepper
- 2–3 large sweet onions, sliced
- 1 can apricot or mango juice (concentrated)

Instructions


- Generously salt and pepper the brisket on all sides and brown in a hot pan to seal in all the juices.
- Place the sliced onions in the bottom of your slow cooker and place the brisket on top. Pour over the can of concentrated juice — trust me, it's delicious!
- Cook on low for 8 hours, until the meat is done and the onions are soft.
- Take out the juice and thicken a little to make a gravy.
- Slice the brisket and serve with your favorite mashed potatoes and vegetables of your choice.
